Sweet potatoes have been rated as the most nutritious vegetable because of the amount of nutrients they provide.

They are high in vitamin C, vitamin A, calcium, potassium, folate, protein, fiber, and beta-carotene to name a few.   They have a low glycemic index, which is good news for diabetics since those monitoring blood sugar levels try to avoid foods with a high glycemic index.

When enjoying these wonderful roots, try not to discard the skin.  Most of the necessary nutrients reside in the skin of the potato. 

Also, to absorb the maximum amount of benefits when eating these potatoes, it is beneficial to combine them with a small amount of fat.  The beta-carotene absorption works best when combined with fat. Vitamin A and beta-carotene help with your aging process in that these two nutrients are good for your skin.  That means, more sweet potatoes equals looking younger.  Just another reason to chow down on this root.

When eating the sweet potato with the skin, you are getting more fiber than oatmeal.  That’s a lot of fiber!  Also, because they digest slowly, you will feel full longer.  That is a good thing when dieting or trying to maintain your figure. 

Are you convinced yet to go out and buy some sweet potatoes?  One great thing about sweet potatoes is, if you keep them in a cool dry area of your home, they will last for a really long time.  No need to refrigerate them, just stick them in a crate on the floor in your closet.
